Defrost pork in the refrigerator overnight or in a sink filled with cool water for 20 mins. Heat a non-stick frying pan with 1 tablespoon olive oil over med-high heat. Place pork in pan and cook for 4-5 minutes per side or until cooked through. Let pork rest 5 minutes before slicing.
