The highest grade of sushi tuna available and considered the filet mignon of tuna, which means the meat is bright and has a watermelon color, firm texture and some visible sinew. A great light fish that can be served grilled, seared or used as your base for sushi or poki salad. It is also known as Yellowfin Tuna but commonly called Ahi.
No Sodium Trypolyphosphate is used (commonly sprayed on fish when presented as 'fresh').
