New Zealand French Cut Rack of Lamb

Beautiful french-cut rack of lamb, grass-fed from New Zealand. The tender meat is packed with flavor and an excellent choice to pair with a white or red wine (or kombucha).

 

Preparation

Preheat oven to 425 degrees F.  Sear meat either on a grill or in a pan on the stove, on high heat, 4 minutes on the meatier side and 2 minutes on the other side.

Place meat on a foil-lined baking sheet and place on lower middle rack of oven. Bake for about 12-15 minutes.

Remove from oven and loosely tent with foil and let rest for 10 minutes before serving.
